Apam Balik

Apam Balik is a sweet peanut pancake which is found in most parts in Southeast Asia. These can be found in night markets at times.

Ingredients:

  • 1 1/2 cup of fresh milk
  • 1 egg
  • 1/4 CSR Low G sugar
  • Yellow food colouring
  • 2 cups of wheat flour
  • 1 tea spoon baking powder
  • 1 tea spoon soda bicarbonate
  • 1/2 tea spoon of salt
  • Sugar
  • Groundnut (to be blended)
  • Creamy corn

Instruction:

  1. Add sugar, fresh milk, egg and yellow food colouring into a blender. Blend until the sugar is dissolved.
  2. Add flour, baking powder, soda bicarbonate and salt. Blend until everything is well mixed.
  3. Set the mixture aside and let it rest for 30 minutes.
  4. Pre-heat a non-stick pan (without oil), and pour 1 or 2 scoops of mixture into the pan according to desired thickness.
  5. When the mixture starts to form bubbles, sprinkle some sugar on top of the mixture. Let it set for a while until the mixture is slightly dry.
  6. Sprinkle some groundnuts and creamy corn after. Cook until the mixture turns golden brown; fold it in half and remove from the pan.
  7. While the apam balik is still hot, brush some butter on top of it and then it is ready to be served.

*If you use normal pan, use tissue to wipe the oil onto your pan so that the mixture does not stick to the pan.
*Cooked with low heat.
*Ground nuts should be fried without using any oil before blended.
